Most people are chronically dehydrated and don't realize it. The reason is that cooking removes most of the water from their food, making it much more important to drink water instead - but who really drinks 8-10 glasses of water per day? Plus, the heat of the cooking process damages or destroys much of the vitamins and protein in your food.

Eating the natural enzymes in our food gives our bodies a break to focus on other tasks vitally important to our health (and lifespan). Exercise sound judgment when you're choosing what to eat raw, because food poisoning is a real risk. When you cook your food, you're killing many of the good things, but you're also killing off the bad ones, too.

If you are going to follow a strict raw food lifestyle, you will find that many diets have additional restrictions about food combining and preparation. Cutting back on cooked food can be an alternative to the more extreme raw diets. If you don't feel like you can give up your cooked meals, but you still want the benefits of raw food, try consuming half a cup of raw seeds or nuts with each meal.
